Vegan & Gluten-Free Mac'n'Cheese

If you're anything like me you probably grew up eating a lot of mac'n'cheese. It was pretty much a staple item in our pantry and has always been one of my favorite foods.
When you're trying to eat clean, vegan, and gluten-free however, mac'n'cheese quickly moves to the top of your 'do not eat' list.
Well no more!
I have found (and modified in my own way) the perfect mac'n'cheese recipe that fits almost any dietary restriction. And I guarantee that even your meat consuming, cheese loving friends will be asking for seconds.

You will need:
16 ounce bag brown rice gluten free pasta
Gluten free plain bread crumbs
2/3 cup vegan butter (Earth Balance soy free is my fav!)
4 tablespoons shallots - diced
2 cups yellow potatoes - diced
1/2 cup carrot - diced
2 cups water
1/2 cup cashews
3-4 cloves of garlic
1/2 teaspoon dijon mustard
2 tablespoons fresh lemon juice
4 teaspoons salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/2 teaspoon smoked paprika

What to do:
1. In a large pot, bring several cups of water and a pinch of salt to a boil. Add pasta and cook for 7 minutes. Drain and rinse with cold water.
2. Preheat oven to 350 degrees.
3. Prepare and dice all vegetables. In a large saucepan, bring all diced vegetables and 2 cups water to a boil. Cover and simmer for about 10 minutes, until vegetables are soft.

4. In a food processor, process cashews, salt, garlic (whole cloves), 2/3 cup vegan butter, dijon mustard, lemon juice, black pepper, and cayenne. Add vegetables and water from saucepan to the blender and process until perfectly smooth.
(TIP! This cheesy sauce also makes a DELICIOUS nacho cheese dip! Use it just for dipping or make a big plate of vegan nachos!)

5. In a 9 x 12 baking dish, mix the pasta and cheese sauce until all is well coated. Sprinkle gluten free bread crumbs until even across pasta. Finish by dusting with a generous amount of smoked paprika. Bake in the oven at 350 degrees for 30 minutes. Enjoy!
