Spicy Kale and Quinoa Salad

This week I've been trying to mix things up and try something new every night for dinner. Last night was Spicy Kale and Quinoa Salad and I've gotta say... it was delicious!
It was fresh, filling, and full of protein. Not to mention it was super easy! I love meals that are simple and also healthy. It lets me spend more time with my family without sacrificing eating well.
I got this particular recipe from The Glowing Fridge and followed it pretty closely. I played with the measurements for the dressing a little bit but not too much.
I loved all the fresh ingredients in this salad. Onions, kale, corn, cilantro, and more. I also added a bit of avocado just because :)

I'm looking forward to eating this again for lunch today! If you're looking for an easy but filling meal, this is definetly a go-to. Let me know what you think about it!
