April 10th - April 15th Meal Plan

The last twenty-four hours have been HARD y'all. Our sweet Pax has not been feeling well and hasn't been interested in eating anything. I'll tell you, having a sick baby is not any fun at all. I absolutely hate seeing him in pain and not being able to do anything to really help him. Needless to say, he has been my focus and the weeks meal plan and prep has sort of gone to the wayside.

Now that he is bathed and resting peacefully, I'm putting a bit of focus into planning out my week. Homework, things that need to get done around the house, and of course, food for each day. This week, I'm going all in and trying new things EVERY DAY.

One of the things I love about this new eating lifestyle, is that it pushes me to try new things. And not only to try tasting new things, but making them as well. I think I'm most excited for Wednesday and Friday's meals, but the proof will be in the bite!

This week's groceries are all courtesy of Trader Joe's, which is seriously my FAVORITE PLACE. I got everything I needed for this week (as shown above) for only $60. And here's the best part...It is all organic! Another great thing about cutting out meat and animal products is how much money you save. With all the money I'm saving, it allows me to buy all natural organic products and it seriously makes all the difference.

Here's what I'll be doing with these beautiful and fresh ingredients this week.

Monday: Power balls

Tuesday: English muffin

Wednesday: Smoothie

Friday: Bagel

Eat out OR mixed green salad with couscous

Saturday: Oatmeal with berries

Hummus veggie wraps

Veggie burgers
