Meal Plan May 1 - May 6

Food and cooking has become a huge part of the way I show love.
I love being in the kitchen and watching my friends and family laughing and hanging out together. Then everyone coming together around a meal that not only tastes good, but is good for everyone too! And being able to be the one that provides that environment and meal for the people I love gives me such joy. To see their faces when they taste things for the first time or to hear how good they think something is...wow... I love that feeling!
Yesterday was a day full of food and friends and my heart could not have been happier.

We started the day off with a vegan potato hash and hot coffee. I'm actually starting to become a fan of breakfast and that hash was definitely a morning game changer.
Next, I tried making a vegan french dip sandwich. HOLY YUM. This was probably one of the best sandwiches I've ever had and it was fairly easy! It was the perfect lunch for a stormy Saturday afternoon.

For dinner, we did make your own pizza! This has become one of our favorite weekend meal ideas and Trader Joe's has an excellent pizza dough. If you're planning on having friends over any time soon, try having a make your own pizza night! It's a lot of fun:)

Okay, onto this week's meal plans! Again, I'm trying to focus a little more on expanding my breakfast ideas, so if you have any suggestions let me know! This week you'll find a few oldie but goodies, and a few that I'm really excited to try for the first time.
Monday: Power balls & banana kale smoothie
Tomato, avocado, and hummus sandwich
Sticky sesame cauliflower wings and roasted bok choy

Vegan burgers, veggies & hummus
Slow cooker quinoa curry
Enjoy and eat up friends!
