March 27-April 1 Meal Plan

Okay y'all. I am SO EXCITED about this weeks meal plan! It contains a few of our all time favorite items as well as several new menu items we have never tried.

One of the main things I love about meal planning is that it pushes our creativity and encourages us to branch out and try new things outside of the norm or our comfort zone. Not only that, but it eliminates coming home and simply staring in our fridge or pantry and then each other with the looming question "what do we eat tonight?"

Have I mentioned how much I LOVE color codes? Well I do. And color coding meals are no different. I use green for breakfast, pink for lunch, and blue for dinner. I try to always make enough dinner to use as lunch leftovers for the following day. Friday's are our day's out, so I plan for that as well (stay tuned for tips on how to plan for eating out and sticking to eating well!)

Monday: English muffin (choose your own topping)

Vegan frozen lunch (Amy's are the best! We use these occasionally on Monday's

when the weekend's escape us)

Mushroom and lentil stuffed peppers (check out how I made these on the Tasty Things

tab!)

Tuesday: Bagel (choose your own topping)

Leftovers (mushroom and lentil stuffed peppers)

Wednesday: Smoothie bowl (check out suggestions on Tasty Things tab)

Leftovers (buffalo cauliflower salad)

Vegan sweet potato and veggie quesadillas (check out how I made these on the

Tasty Things tab!)

Thursday: Bagel (choose your own topping)

Leftovers (vegan quesadillas)

Spaghetti squash and tomato bake (check out how I made these under the Tasty

Things tab!)

Friday: English Muffin (choose your own topping)

OUT (look for tips on how to eat out and stick to eating well under the Wellness Tips tab)

Dinner with friends! We are doing a build your own pizza night. So fun!

Saturday: Smoothie bowl

Veggie burgers (Trader Joe's has some amazing ones! Mushroom and risotto have

been our favs)

Veggie lasagna (This is one of my FAVORITES to make and it's always a big weekend

hit! Check out how I make it under the Tasty Things tab)
